Dolmeh is one of the foods that have Azeri origin. For this reason, they all have Azerbaijani noble recipes that are somewhat different from the rest of the places. If you do not speak Azerbaijani, you should know Azeri people call this food: ‘YapragDolmasi’. Yaprag is in fact the same leaf of grapevine, which is used in various ways in Iran. Some people cook and eat it; some put it to the bottom of the pot and offer a delicious Gazmakh.
To make Dolmeh, bulgur, rice, leek, animal oil (sari yagh), fried onions and vegetable are used, and put all of these after cooking and preparation in the leaves and put them in a bowl. The important thing is to choose the perfect leaf for Dolmeh, the more delicate the leaves are, the more delicious will be. Usually the most suitable leaf for this dish is raspberry grapevine (yellow grapevine), its color is green, lighter and the size of the leaves should not be too coarse to make the Dolmeh look more beautiful.
